His cuisine is based on the careful selection of raw ingredients in constant awareness of the environment and aquaculture. Caviar is the starring product at Sollo Restaurante, and they organize tastings of their three caviars from Riofrío: Russian, Iranian and Ecological, paired with an exclusive cava.
