Fish and shellfish are the protagonists of a menu which also takes advantage of local raw ingredients and produce. Dishes you will find on the menu include Mantarraya guacamole, with scallops and jalapeño pepper emulsion; Oysters with fermented chilli sauce and passion fruit granita; Grilled octopus black ceviche with charcoal habanero chilli sauce; green pineapple and prawn aguachile macerated with serrano chilli to name a few.
