About Chef Paco and the Siles Family Tradition
Chef Paco learned to cook by watching his grandfather, mastering techniques such as the perfect sofrito colour, the exact moment to stop stirring the rice, and the unique sound of the socarrat when tapping the pan with a wooden spoon. The Siles family has been involved in food since 1972, working as restaurateurs, caterers, and cooks across three generations.
