About Chef Paco and the Siles Family Tradition

Chef Paco learned to cook by watching his grandfather, mastering techniques such as the perfect sofrito colour, the exact moment to stop stirring the rice, and the unique sound of the socarrat when tapping the pan with a wooden spoon. The Siles family has been involved in food since 1972, working as restaurateurs, caterers, and cooks across three generations.

What to Expect from the Experience

  • Your class begins with a cold glass of wine or sangria served on the terrace, accompanied by a selection of tapas and relaxed conversation.
  • The session is private—no strangers join mid-session, whether you are a couple or a group of up to thirty.
  • No prior cooking skills are necessary; the focus is on enjoying a hands-on, authentic family recipe.
  • When ready, Chef Paco invites you to the paella station to start the cooking process over a traditional fire.
