This course, taught by Maria Paula Maggiora, Bachelor of Nutrition, serves to provide the basis of a healthy diet, loaded with nutrients, based on genuine foods, which will allow us to maintain our health throughout life.
Day 1 - Consciousness Do we want to change our habits? How healthy are we today? Keys to achieving change • What is food? • What does our physical body need? • Basic nutrients and how to incorporate them (macro and micronutrients) • Definition of objectives for a healthy diet. • How do we translate that into our dishes? Recipes for breakfasts or snacks: Pudding de Chía and fruits, Vegetable seeds cheese and energy bars of coconut and lemon.
Day 2 - Knowing better about food Food vs. Products • Reflections to meditate: organic, natural, integral, vegetarian • How to consume and distribute food throughout the day • Key nutrients, antinutrients and how to deactivate them. Recipes for appetizers and dips: Hummus, carrot aioli, babbaganoush and homemade nachos.
Day 3 - Do we know what we eat? Food Myths • The importance of production processes • Additives, Transgenic, Devitalized, etc • What to avoid: Labeling • The basic pantry, planning. Recipes for lunches and dinners: Millet burgers, salted quiche dough and energetic salad with spiced rice.
Day 4 - The assembly of a basic menu, 'let your food be your medicine' We talk about the different feeding styles: advantages and disadvantages • Seasonality and locality. The pillars of the Slow Food movement • Kitchenware and healthy cooking styles • Arming of a weekly menu • Overview Recipes for fruit smoothies, detox juices, lemonade and flavoured waters.
